Two-Potato Soup
- 3 cups sweet potatoes, cubed
- 3 cups potatoes, cubed
- 2 cups celery ribs, sliced
- 2 cups onion, diced
- 1 cup carrot, grated
- 1-2 garlic cloves, peeled and minced
- ¼ cup dried parsley
- 1 tsp herb salt
- ½ tsp sea salt
- pinch of cayenne pepper (to taste)
- 8 cups vegetable stock
Place all prepared vegetables, including seasonings, in a soup pot and add stock. Bring to a boil and then turn down to simmer and cover. Simmer until all the vegetables are tender. Blend until creamy and serve.
