Sweet Potato Curry
- 1 onion, chopped
- 3 medium size sweet potatoes
- 1 bunch cilantro, washed and chopped
- 1 can chopped tomatoes
- 1 can chickpeas
- 3 cloves garlic, crushed
- 3 cups vegetable stock
- 3 tsp curry powder
- 1 Tbsp nutritional yeast

Chop sweet potato into large chunks and cook until soft. Drain.

In a large saucepan, fry onion and garlic. Add curry powder and cook for 2 minutes. Add tomatoes, chickpeas and stock and bring to the boil.

Chop cooked sweet potato into smaller chunks and add to the curry. 
Add chopped cilantro and simmer for 15 minutes (don't worry if it looks very runny in the beginning; it does thicken.)
