Red Pepper Mayonnaise
- 3-4 large red bell peppers
- ½ cup cold-pressed olive oil
- juice of 1 lemon
- 1 tsp fresh oregano
- herb salt to taste

Coarsely chop the peppers and place in a small pot with the salt.  Simmer gently with the lid on for about 15 minutes.  Drain the juices well. 

Puree in a food processor until smooth. 

Add the oil drop by drop, followed by the rest of the ingredients and blend well. 

Adjust salt for taste and serve.
