Honey Mustard Roast Potatoes
- 1 kg (2 pounds) baby potatoes
- 2 Tbsp olive oil
- 1 tsp salt
- 1 tsp ground black pepper
- 1 Tbsp Dijon mustard
- 1 Tbsp honey
Preheat oven to 220ºC (425ºF).
Wash potatoes, pat dry and set aside.
In a large mixing bowl toss together olive oil, salt, pepper, mustard and honey. Add potatoes to mixture and coat each potato well.
Transfer potatoes to baking dish, place in center of oven and bake uncovered for 25 minutes or until easily pierced with a fork.
