- 1 cup water
- 3 large carrots, sliced
- 2 medium potatoes, cubed
- 1 cup green beans, sliced
- 3 stalks celery, sliced
- 1 bunch spinach, shredded
- 1 cup broccoli, broken into florets
- 1 cup green peas
- 1 large onion, chopped
- 1 large leek, sliced
- ¼ cup parsley, chopped
- 1 clove garlic, minced
- sea salt to taste
- 2 tsp basil
- 2 bay leaves
- 1 liter (1 quart) tomato juice
- 1 Tbsp nutritional yeast (optional)

Bring all ingredients to the boil and simmer until carrots and potatoes are tender. 

Remove bay leaves and serve.
