I have to say I’ve never eaten a beet in my life. Maybe you convinced me to try. . . Maybe!

I love beets and am growing them in my garden for the first time this year. Unfortunately the bunnies are fighting me for the tops/leaves, but hopefully I will have some delicious beets at the end of the season!

@MamaBearJune: June, you cover them with water and boil a fork can easily go into them… I’ve never really timed it, but it’s probably about 30 minutes. Then I usually rinse them in cool water, until I can handle them. The skin comes off just by rubbing, and your fingers will be stained pink for a few hours. Then I slice them, a process where more ends up inside me than inside the salad bowl!

I love beets. If you do juice them, be careful to add other veggies like carrot and celery. I once drank only beet juice and it was “too” cleansing and I vomited. That didn’t deter me, I knew they are good for you and I made sure to mix the beet juice with other juices. It only happened that one time and I have had lots of juice with beets since then. I love roasted beets with a little olive oil. Yum. The recipe you posted looks great – I will definitely try it. Also, your blog changes look very nice.
