Chick Pea Burgers

I’ve been trying and adapting various vegan burger recipes over the last few weeks. This one was very tasty, so I thought I’d share it with you.

Chick Pea Burgers

2 Tbsp coconut oil
3 baby leeks, sliced
2 cloves garlic, minced
1 tsp dried oregano
1 tsp chili powder
1 large red or green bell pepper
1 medium tomato, chopped
1 can chick peas, drained and rinsed
dry bread crumbs
salt and pepper to taste
2 Tbsp cilantro

4 whole wheat rolls, cut in half
2 avocado pears, mashed with some herb salt
a few lettuce leaves
a few slices of tomato
organic sun-dried tomato pesto

Cook baby leeks, garlic, oregano and chili powder in 1 Tbsp coconut oil over medium heat for about 2 minutes.

Add the bell pepper and chopped tomato and cook while stirring until tender. Remove from heat, add the chick peas and, using a hand blender, puree this mixture. Add salt, pepper, cilantro and enough bread crumbs to make stiff patties.

Shape four patties and fry them over medium heat in the remaining coconut oil until heated through.

Spread the bread rolls thickly with mashed avocado. Add a few lettuce leaves and slices of tomato, followed by the patties. Top with a dollop of pesto. Enjoy!

This is not something we eat often, but it’s a great treat! And much healthier than what you’d find at any takeout place. We both had two of these for supper and it was plenty. I was clever enough to only buy four rolls today, so I don’t have the temptation of more bread rolls hanging around. In the past I’d buy a packet of six and end up eating the other two “just because they were there”.

These sound great Hanlie! And I’m not just saying that; I saved the recipe in my Evernote. I’ve tried a lot of veggie burgers too recently, and I’ve been pleasantly surprised by almost all of them. None with chickpeas though, and chickpeas are the best!

@Kelly Happy Texan: I so believe in cooking my own food! I know exactly what I put in there, and it’s not 100 different forms of corn and soy, tons of salt and all kinds of sweeteners and sugars!

are no salt added beans available to you there – or are you using the kind with sodium (if you are – consider cooking dried beans and then putting them in serving sizes in the freezer).

I too buy only as much as I need packages. If I have to buy bigger quantity – I give or throw the extras away. So I think you are very smart for doing that too – makes a BIG difference in the food willy nillies.

Yummy! I was talking to my roommate and asking her about making veggie burgers, and she said that as long as you’ve got egg and breadcrumbs in there to hold it all together, anything can go in them. So I guess the oil does the trick here- kinda neat to think that there are so many possibilities for recipes!

Oh yum! I love chickpeas in anything and this sounds simply delicious! I’m with you on only purchasing what you need as far as the bread–too much of a temptation for me to have lots around. I much prefer to make my own veggie patties/burgers than purchase pre-made processed ones from the store. Homemade whole food is always so much healthier, not to mention tastier!

@Diane, fit to the finish: The coconut oil is not actually an “ingredient”, it’s just for frying and sauteeing. So yes, you don’t need to use it at all. It’s just the safest oil to heat.

I was never one for burgers before I went veggie, so I never sought out veggie burgers. I actually had my first veggie burger last week! It was good, but nothing sensational.

But I love this recipe as it is nicely based in all these herbs, spices and chick peas, and sounds easy! I actually want to give these a try this weekend, as we are having some company over, non-veg, but we still prepare everything veg, so it should be a nice treat for them, and I want to try it too :)
