I’ve been asked for my recipe for ratatouille. Here it is again:

Quick and Simple Ratatouille
1 onion, chopped
3 eggplant, sliced
1 packet zucchini, sliced
2 red bell peppers, sliced
1 packet mushrooms, sliced
4-5 large tomatoes, chopped (if you like it saucier, add more)
fresh oregano, chopped
2 cloves garlic, crushed
herb salt and black pepper to taste
Layer the ingredients in a casserole dish or a saucepan and either bake at 200°C (390°F) for 45 minutes, or simmer gently on the stovetop.
Serve over brown rice or wholewheat pasta or, as a variation, add a layer of sliced potato and serve on its own.
This is so simple to make and we have it fairly often. We usually only eat concentrated carbs like rice, bread, oatmeal or potatoes once a day, so this would be eaten on a day that Craig had to leave early and we had fruit for breakfast instead of oatmeal. My favorite concentrated carb (after oatmeal of course!), is chewy, flavorful brown rice.
