Five Bean Soup

It was quite cold this morning, which made me crave a bowl of hearty bean soup.  I won’t have any, but I thought I’d share the recipe with you, since it’s so easy to make.

Five Bean Soup

 

1 tbsp olive oil

1 clove garlic, minced

1 small onion, diced

1 stalk celery, diced

1 medium carrot, diced

1 tbsp barley, rinsed

2 cups boiling water

4 tbsp vegetable stock powder

1 tin pinto beans, drained

1 tin black beans, drained

1 tin kidney beans, drained

1 tin navy beans, drained

1 tin chick peas, drained

1 cup tomatoes, diced

1 bay leaf

¼ tsp chopped basil

sea salt to taste

In a medium saucepan, heat oil over medium heat.  Saute garlic and onion until translucent.  Add remaining ingredients, cover and simmer for about 30 minutes.
